2 oz Mezcal Del Maguey
1 oz Fresh Lime Juice
3/4 oz Agave Syrup
1 Egg White
2-3 Dashes Angostura Bitters
Ice
A slice of Lime or an orange twist
Method:
Chill the Glass: Place your cocktail glass in the freezer to chill.
Mix the Ingredients: In a shaker, combine 2 oz of Mezcal Del Maguey, 1 oz of fresh lime juice, and ¾ oz of agave syrup.
Add Egg White: If desired, add 1 egg white for a frothy texture.
Dry Shake: Shake the mixture vigorously without ice to emulsify the egg white.
Add Ice: Fill the shaker with ice and shake again until well-chilled.
• Strain: Double strain the cocktail into your chilled glass to remove ice shards and egg foam. • Garnish: Add 2-3 dashes of Angostura bitters and garnish with a lime slice or an orange twist.
